Quick Shish Tawook (Lebanese Grilled Chicken Skewers)
Juicy chunks of chicken thigh soak in a garlicky Toom marinade spiked with tomato paste, paprika and warm cinnamon, then hit the grill until charred at the edges. Tucked into warm pita with an extra swipe of garlic dip, it tastes like it took all day.
Ingredients
- 2 poundsboneless skinless chicken thighs · cut into large chunks
- 1/2 cupToom garlic dip · plus more for generous spreads on pitas
- 2 tablespoonsgreek yogurt · optional
- 1 tablespoontomato paste
- 1 teaspoonpaprika
- 3/4 teaspooncinnamon
- 1/2 teaspoonoregano
- 1/2 teaspoonginger
- 1 teaspoonsalt
- 1/2 teaspoonblack pepper
- —pita bread · warmed, for serving

In a large bowl, whisk together the Toom, yogurt, tomato paste, paprika, cinnamon, oregano, ginger, salt and pepper to make the marinade.

Add the chicken cubes to the same bowl and coat them in the marinade. Cover and refrigerate for 4 hours if you have time.

Thread the chicken onto skewers right before grilling.

Grill over medium heat for 5-8 minutes per side, until cooked through and charred at the edges.

Serve the chicken in warm pita bread with a generous spread of Toom.
Creator's notes
Three time-saving hacks: cut and marinate the chicken right on a cutting board, dry the chicken really well before marinating, and use Toom garlic dip in place of garlic cloves — it's a great substitute when a recipe calls for oil, garlic and lemon juice.
