Sheet Pan Chicken Fajitas
Juicy strips of chicken and sweet bell peppers roast together on one sheet pan under a smoky homemade fajita seasoning. Pile it all into warm tortillas with lime, cilantro, and avocado for a weeknight dinner with almost no cleanup.
Ingredients
For the fajitas
- 1 ½ poundsboneless skinless chicken breast · sliced into thick strips
- 3bell peppers · sliced into strips
- 1red onion · thinly sliced
- 2garlic cloves · minced
- 3 tablespoonsolive oil
For the fajita seasoning
- 2 teaspoonschili powder
- 1 teaspooncumin
- 1 teaspoonpaprika
- ½ teaspooncoriander
- ½ teaspoononion powder
- ½ teaspoonsalt
- ½ teaspoonblack pepper
For serving
- —flour tortillas
- —lime wedges
- —fresh cilantro
- —avocado

Preheat the oven to 425°F and line a large baking sheet with parchment paper.

Place the chicken, peppers, onions, garlic, and olive oil on the baking sheet.

Combine the seasoning ingredients in a small bowl, then sprinkle evenly over the chicken and vegetables.

Toss everything together with tongs or your hands to evenly coat, then spread into an even layer.

Bake for 15-20 minutes, tossing once halfway through, until the chicken is cooked through and the vegetables are tender. In the last 5 minutes, tightly wrap a stack of tortillas in foil and set it on the baking sheet to warm them.

Serve the fajitas with the warmed tortillas, along with lime juice, cilantro, and sliced avocado, if desired.
