Sheet Pan Chicken Shawarma
Juicy spiced chicken thighs roast alongside sweet carrots, red onion, and green pepper on a single sheet pan. All the warm cardamom-and-cumin flavor of classic shawarma with almost no cleanup.
Ingredients
- 2 poundsboneless, skinless chicken thighs · thinly sliced
- 2 tablespoonsolive oil
- 2 tablespoonslemon juice
- 4 clovesgarlic · minced
- 1 teaspoonpaprika
- 3/4 teaspoonsalt
- 1/2 teaspooncardamom
- 1/2 teaspooncumin
- 1/4 teaspooncinnamon
- 1/4 teaspooncrushed red pepper
- 1red onion · chopped
- 4carrots · chopped
- 1green pepper · chopped
- —toum · for serving
- —Arabic-style pita · for serving

Preheat the oven to 425°F and line a baking sheet with parchment paper.

Pat the chicken dry with paper towels.

In a large bowl, whisk together the olive oil, lemon juice, garlic, paprika, salt, cardamom, cumin, cinnamon, and crushed red pepper. Add the chicken and gently toss to coat.

Transfer the chicken to the prepared sheet pan and spread it out. Nestle the onion, carrots, and green pepper around the chicken.

Bake for 18 minutes, then broil on the top rack for 2 minutes on high.

Serve with pita and garlic sauce (toum), if desired.
