Single Tomato Lunch Salad with Soft-Boiled Eggs
A juicy tomato salad with mint, dill, red onion and Kalamata olives dressed in red wine vinegar, olive oil, salt and sugar, topped with soft-boiled eggs. It gets better as it sits and the tomatoes release their juices — a fork-and-knife kind of lunch.
Ingredients
- 1beefsteak tomato · cut into chunks
- —fresh mint · chopped; not too much, it can be overpowering
- —fresh dill · chopped; not too much, it can be overpowering
- —sliced onion
- —Kalamata olives · roughly chopped
- —red wine vinegar
- —olive oil
- —salt
- —sugar · a little, to balance
- —eggs · soft boiled
Steps

Chop the mint and dill and add them to a bowl, using a light hand with both since they can be overpowering.

Cut the tomato into chunks and add it to the bowl.

Add the sliced onion and roughly chopped Kalamata olives.

Dress with red wine vinegar, a little olive oil, a little salt and a little sugar, then toss to combine.

Let the salad sit so the tomatoes release their juices and the onion mellows — it's good right away but better after resting.

Meanwhile, soft boil the eggs, then peel and add them to the salad. Serve with a fork and knife to catch all the juices.
Creator's notes
Justine makes this when her garden has her eating a tomato a day. She used a beefsteak tomato that looks like a baby heirloom. It's good right away, but improves as it sits and the juices come out. She was tempted to add feta but resisted.
