Tahini Fried Eggs
Eggs fried in bubbling tahini instead of oil, giving the whites a nutty, faintly sweet richness. Finished with sesame seeds and tucked into warm pita for an easy, satisfying breakfast.
Ingredients
- 2 tablespoonstahini
- 2large eggs
- —Salt and pepper · to taste
- —Sesame seeds · for serving
- —Pita · for serving
Steps

Heat a medium nonstick skillet over medium heat. Add the tahini and allow it to spread and cook until bubbly, about 30 seconds.

Crack an egg carefully into the skillet on top of the tahini. Repeat with the other egg, adding it on the other side of the skillet.

Allow the egg whites to cook for 1 minute, then cover with a tight-fitting lid and cook uninterrupted until the whites are set and the yolks are set to your liking, about 2 to 4 minutes.

Season with salt and pepper and sprinkle with sesame seeds, if desired. Serve immediately with pita.

Tahini has good fats like olive oil, but it also adds a nutty, sweet taste to the eggs that is especially good stuffed in a pita pocket.
