Upside Down Caesar Salad with Air Fryer Chicken Cutlets
Crispy parmesan-panko chicken cutlets air fried until golden, then piled high with a crunchy romaine Caesar salad. The cutlets stand in for croutons, so every bite gets that crisp-meets-creamy contrast.
Ingredients
For the chicken
- 2chicken breasts · sliced horizontally
- 1/2 teaspoonsalt
- 1/2 teaspoonblack pepper
- 1egg · large
- 1 cuppanko breadcrumbs
- 1/2 cupparmesan cheese · freshly grated
- 1 teaspoonpaprika
- 1 teaspoongarlic powder
- —avocado oil spray · Chosen Foods
For the salad
- 1head romaine lettuce · large, cut into large pieces
- 1/4 cupshaved parmesan cheese
- 1/4 cupCaesar dressing · Chosen Foods
Steps

Season the chicken breasts with the salt and pepper.

Beat the egg in one bowl. In a second bowl, stir together the panko breadcrumbs, grated parmesan, paprika, and garlic powder.

Dip the chicken in the egg, rotating to coat evenly.

Dredge the chicken in the breadcrumb mixture, pressing to coat evenly and making sure none of the chicken is exposed.

Place the cutlets on a wire rack and spray generously with avocado oil spray.

Air fry the chicken for 8 minutes, or until golden brown and cooked through. Set aside.

Place the romaine in a large serving bowl, top with the shaved parmesan, drizzle with the Caesar dressing, and toss gently to combine.
