Crispy Feta Fried Eggs
A single skillet turns crumbled feta into a golden, lacy crust around a harissa-spiked fried egg, finished with fresh herbs and slid onto a toasted tortilla. It comes together in about ten minutes and eats like a restaurant breakfast.
Ingredients
- ¼ cupcrumbled feta cheese
- 1 tablespoonharissa · or pesto
- 1large egg
- 1 tablespoonfresh dill or basil · chopped
- —avocado oil cooking spray
- 1small tortilla
Steps

Heat a small skillet over medium heat and add the feta cheese in a ring around the outside of the pan. Let the feta melt for 2-3 minutes.

Add the harissa or pesto to the middle of the pan and gently crack the egg into the center over the harissa. Cook the egg to your liking, 3-5 minutes.

Once the egg is cooked and the cheese has formed a golden brown crust, sprinkle with the fresh dill or basil, then gently lift it out of the pan with a spatula and set it on a plate.

Spray the skillet with cooking oil and add the tortilla. Cook until lightly golden, 1-2 minutes per side, then slide the crispy feta and egg on top of the tortilla and serve.
Creator's notes
Inspired by @themodernnonna. The feta doesn't get super crispy but tastes great fried with the egg. For boiled eggs instead, use the air fryer method: 250°F for 14 minutes — they keep all week in the fridge.
