Watermelon Fries with Strawberry Cottage Cheese Dip
Crisp, crinkle-cut watermelon batons stand in for fries alongside a creamy strawberry cottage cheese dip. It's a refreshing, high-protein snack that comes together with no cooking at all.
Ingredients
For the watermelon fries
- 1watermelon
For the strawberry dip
- ¼ cupcottage cheese
- ¼ cupstrawberries
- 2 teaspoonshoney · optional
Steps
- 1
Remove a half inch off the top and bottom of the watermelon.
- 2
Stand the watermelon on one of the cut sides. Using a sharp knife, start from the top and follow the contour of the watermelon, carefully peeling the skin off about ½ inch in depth.
- 3
Continue to peel the watermelon, taking off 2-3 inch wide pieces of the peel following the white inner peel color, cutting deep enough to see only the flesh.
- 4
Cut the watermelon into slices, then trim the edges to make a rectangle. Use a knife or crinkle cutter to cut the watermelon into fries.
- 5
Blend the cottage cheese, strawberries, and honey until well combined.
- 6
Serve the dip alongside the watermelon fries.
