Watermelon Fruit Pizza
A thick round of watermelon spread with honey-sweetened ricotta and cream cheese, then piled with fresh berries, kiwi, and mint. It's a no-cook summer dessert that comes together in minutes and slices like a pizza.
Ingredients
- 1large watermelon · one slice about 1 inch thick, cut from the center of the melon
- 1/2 cupricotta cheese
- 1/4 cupcream cheese · whipped
- 1 tablespoonhoney
- —strawberries · sliced, for topping
- —blueberries · for topping
- —kiwi · sliced, for topping
- —fresh mint · for garnish
- 1 tablespoonshredded coconut · for topping
Steps

In a small bowl, mix the ricotta, cream cheese, and honey together until combined.

Spread the ricotta mixture over the watermelon round and cut it into 8 equal slices.
